ASIC HOMEMADE MIX FOR CAKE

8 c. (2 lbs.) sifted flour

2 c. Cannet white shortening

5 c. sugar

1/4 c. baking powder

4 tsp. salt

Into extremely large bowl turn half of the flour, add shortening, remaining flour, sugar, baking powder and salt. With a pastry blender cut in shortening until it is in fine particles and mixture looks crumbly. Store in airtight container in refrigerator up to 6 months. Makes 15 cups. (If self-rising flour is used, omit baking powder and salt.)

Valentine's Blueberry Muffins

For Valentine's Day we are going to make blueberry muffins. The blueberries that we are using are from a local farm from this summer. The Junior Farmers and I froze the blueberries, and now we're getting them out to make a tasty treat full of love when it feels like our world is full of snow..


Recipe: Old-Fashioned Blueberry Muffins

1 cup rolled oats

1 cup orange juice

3 cups flour

1 cup sugar

2 1/2 teaspoons baking powder

1 teaspoon salt

1/2 teaspoon baking soda

1 cup oil

2 egg

2-3 cups fresh or frozen blueberries

Streusel topping

1/2 teaspoon cinnamon

1/2 cup flour

1/4 cup brown sugar

1/4 cup white sugar

5 tablespoons butter

1-2 teaspoons orange zest

Orange glaze

2 cups powdered sugar

3 Tablespoons orange juice

Preheat oven to 400 degrees

Soak oats in orange juice while putting dry ingredients together. Lightly beat eggs. Add the oil to eggs, then fold into the oatmeal-OJ mixture. Add the oat mixture to dry ingredients, stirring well. Gently fold in berries.

Spoon into greased muffin pans.

Mash streusel ingredients together using a fork until mixture is crumbly. Spoon evenly onto muffins. Bake 16 minutes for regular-sized muffins and 30 minutes for jumbo muffins.

Drizzle warm muffins with orange glaze.

Rapper's Frosting

Hershey's Kisses candies, about 20
Bar of dark chocolate
3 tablespoons butter
1/3 cup milk

Add chocolate, butter, and milk to a saucpan. Stir until butter melts on medium heat. Bring to a boil, then remove from heat. Pour into a bowl and place in the fridge until it cools. Next add a little more milk and whip vigorously for a few minutes until it looks like the frosting you buy at the store, except tastes a lot better!


Quick and Easy Powdered Sugar Icing

2 cups powdered sugar (sifted)
1/2 teaspoon vanilla
2 tablespoons milk

Mix the powdered sugar with the vanilla and milk. Then add more milk a bit at a time until it is thin enough to drizzle over a cake. Once you've iced your cake, it's best to let it stand for one or two hours.

To make chocolate icing, add two tablespoons cocoa powder when you mix the powdered sugar and follow the rest of the recipe above.

Thick Vanilla Frosting

1 cup shortening
2 teaspoons vanilla
4 cups powdered sugar (sifted)
4 tablespoons milk

Beat together shortening and vanilla for 30 seconds medium speed with an electric mixer. Add 2 cups of powdered sugar a bit at a time while beating. Then add 2 tablespoons milk. Slowly add in the rest of the powdered sugar and the rest of the milk until you get the right thickness for your frosting.

Honey Oatmeal Bread Recipe

Ingredients

  • 2 cups boiling water
  • 1 cup rolled oats
  • 1/2 cup honey
  • 2 tablespoons butter
  • 2 teaspoons salt
  • 1 (.25 ounce) package active dry yeast
  • 1/2 cup warm water (110 degrees F/45 degrees C)
  • 4 cups bread flour
  • 2 tablespoons honey, warmed slightly
  • 2 tablespoons rolled oats

Directions

  1. In a large mixing bowl, combine boiling water, oats, 1/2 cup honey, butter and salt. Let stand for 1 hour.
  2. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  3. Pour the yeast mixture into the oat mixture. Add 2 cups of flour; mix well. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 20 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  4. Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes. Preheat oven to 350 degrees F (175 degrees C).
  5. Bake at 375 degrees F (190 degrees C) for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped. Remove loaves from pans, brush tops of loaves with 2 tablespoons honey and sprinkle with oats.

Yeast Free Pizza




Yeast free home-made pizza!


a way great to incorporate most garden vegetables....!

YEAST FREE PIZZA CRUST & HOMEMADE
PIZZA

CRUST:

2 c. flour
1 tsp. salt
2 tsp. baking powder
2/3 c. water
1/4 c. vegetable oil

PIZZA:

Tomato sauce
spinach
pineapple
turkey pepperoni
Chopped onion
1/2 tbsp. pizza seasoning
Mushrooms
Shredded pizza cheese

Mix flour, salt, baking powder and water. Knead on floured counter just until workable and spreadable, about 2 minutes. Put on pizza pan, with fingers spread vegetable oil on crust (helps so tomato sauce won't soak in crust) then put tomato sauce on, then meat of your choice, then pizza seasoning, next put on mushrooms and cheese on top. Bake at 425 degrees for 20 minutes. This pizza seasoning can be bought, it has all your dried spices all together and you just sprinkle it on.

Las Tortillas


Tortillas:


2 Cups Flour
1 Tsp salt
1/4 Cup butter
1/2 Cup warm water
















Mix and knead the mixture all together for twenty minutes in a large bowl, you may need to add a little more water if it's cracking too much.

Make smaller round balls out of the dough, and set aside on the table.




Use a rolling pin to roll the tortilla flat on the table. Move the rolling pin in all directions.
















Fire it up on the pan on the burner: no oil needed. Flip after a few minutes in the hot skillet/non-stick pan, and set on a clean bread towel.




Chop other vegetables such as peppers, onions, beans, and garlic.....


Make quesadillas with two tortillas with all your favorite ingredients inside.





Lay one tortilla on the bottom and one on top with cheese, beans, corn, lettuce, salsa, onions, peppers, and maybe even baked chicken in between.






Serve and enjoy!!
